Best Ever Vegan Banana Walnut Muffins
These banana walnut muffins are easy to whip up on short notice, whether you're at home or on the road in your RV.
Equipment
- 1 large bowl mashed
- 1 large cup muffin tin
Ingredients
- 3-4 bananas mashed
- 1 tsp vanilla extract
- 3 tbsp maple syrup
- 1 tbsp apple cider vinegar
- 2 tbsp coconut oil
- 3/4 cup soy milk
- 1 ½ cups flour
- 1 tsp cinnamon
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tbsp hemp hearts
- 1/2 cup walnut pieces
- 1 handful raisins optional
Instructions
- Preheat oven to 375º
- Grease muffin tins or line with muffin cups
- Mash bananas
- Add all liquid ingredients to bananas an stir
- Add dry ingredients in the order given and stir thoroughly.
- Add walnuts, hemp hearts and raisins, if using
- Stir until batter is thick but soft and batter-like
- Bake for 25-30 minutes or until tops spring back when touched lightly
- Cool in pan for 10 minutes

It’s a bright, beautiful morning here at Spruce Woods Provincial Park. I cleverly made the avocados into guacamole, and I cooked my last potato. In between eating plums, I made most of the bananas into vegan banana walnut muffins.
Cell service is really bad here and I barely have internet so I couldn’t access a recipes. Well, I decided to wing it anyway. I’m glad to say they turned out really great. Moist, flavourful, nutty and nutritious muffins- what more could I ask for? Be sure to give one to that friend who asks "where do vegans get their protein?
